I was there … an acquired taste … I grew up around Borscht (beet soup) and have made it once. Probably never again.

The smell of beets made me gag when I was small; now I LOVE them. So, some things do change 😉

I wasn’t crazy about them as a kid, and it was the same caramel and a few other flavours and foods. Funny how tastebuds change.

Made me want a salad after reading this! I did not have the same ingredients so did my usual …the italian way…olives artichoke tons of veggies and zesty peppercorn…never tried beets.. they taste earthy? i heard! Maybe i should try your way sounds delish 😉

Beets may be an acquired taste, especially if they’re pickled. Quite juicy. They stain everything red. You can also roast them with other veggies. Italian antipasto is my favourite. Olives wound probably be in my last meal.

I heard! My favorite olive salad..if you never had it’s made in olive oil and had black olives and green as well as kalamata and carrots and cauliflower its delish..

Have you ever paired beets with orange? My Swiss aunt made this once, and chopped some crunchy fennel in, plus herbs and arugula and omg I’m still fantasizing about it.

Sounds delicious… I’ve used both mandarin oranges and clementines in the past culinary experiments with salads. Feta cheese with beets is unbeatable, too. My vinaigrette is fairly tangy and spiced with chilli flakes. 😎

I love the entire process from planning, shopping, prepping, etc. Zen is a great description, Suzette. And whenever possible, it shouldn’t be rushed, or ever taken for granted the blessings we have. 😊
